Sugar-free Cranberry Sauce (healthy, too!)

Ingredients:
4 cups +/- fresh, raw cranberries
juice of 1 orange
1 wedge of fresh orange
1 red pear, cored and sliced
water, start with about 3/4-cup
stevia, to taste
agave nectar optional

Preparation:
Rinse cranberries. Toss out any that are shriveled or going bad. Pick off any stems that may be hanging on.
Put all ingredients into a sauce pan on medium heat. Cook gently, stirring occasionally. You may need to add more water as the sauce thickens. Add more stevia to sweeten to your liking. Or add agave nectar, which does not impact blood sugar and is a popular low glycemic sweetener that is natural, too.

Stevia can taste bitter, especially if too much is used to sweeten. The agave is a nice and natural alternative.

This cranberry sauce is more tart that sweet. Cranberry sauce and stuffing are my favorite parts of the Thanksgiving dinner! With an eye on my waistline (which is shrinking, thanks to low glycemic eating and lots of exercise, thank you very much), I wanted to create a cranberry sauce that did not require stringent portion control. This will be tasty not only with turkey, but with plain yogurt and cottage cheese, as well.
